Once the musts of both varieties have fermented, the wine is blended and filtered, followed by tirage, with yeasts specially selected for the best French champagnes.
Pale colour with golden highlights and a slight greyish tone due to the Pinot Noir. Fine bubbles with abundant and long-lasting crown. Intense and elegant aroma, combining varietal aromas with the complexity of ageing. Fresh notes of fruit (Golden apple, medlar) and white flowers combine with the creaminess that it acquires over time in the bottle.
The aromas of the ageing process gain strength over time in the glass, enveloping the freshness of the fresh fruit, providing a perception of great breadth and balance, suggesting the cold climate of our vineyards.
On the palate, its great structure is surprising, marked by a more continental than Mediterranean acidity, which gives vivacity to a cava of great volume contributed by two varieties such as Pinot Noir and Xarel lo. Delicate, fine and creamy bubbles, given its small size, which nuance the acidity, leaving a velvety texture. Great freshness that creates a powerful and pleasant ensemble, with a finish that maintains the memory of fruit, aging and raw hazelnut for a long time.Ideal for tasting and enjoying as an aperitif.
